Hi, I'm Claudia!
Although I started cooking and baking when I was young, the way I approached food changed drastically when I returned from studying abroad in Europe back in 2019. When I returned to America, I became very ill, my symptoms worsening when I ate.
As my health issues worsened to a point where I was struggling with school and work, I knew I had to take extreme measures to recover my health. Research led me to the Autoimmune Paleo Protocol, an elimination diet designed to get me back to functioning and help determine which foods were making me so ill.
Unable to eat any grains, dairy, legumes, nightshades, nuts, seeds, or eggs for a few months, I had to get very creative in cooking and baking without those ingredients, forcing me to really dig into the science of food to be able to eat what I loved. My health improved drastically, and I realized that I had felt a low-level of illness for as long as I can remember, that was finally gone.
Although I am now able to eat many more foods again, I continue to focus on feeding myself and my family with whole, real foods, while still avoiding personal trigger foods such as gluten, dairy, and tomato. With several years of practice under my belt, I now want to help others in my community find ways to improve their own health while still enjoying delicious food.
For this reason, I'm hosting this website with all of my courses containing what I've learned - completely free for anyone to access, along with in-person courses hosted at the Bloomer Public Library. Feel free to explore the website and learn all you can, finding not only great recipes but also the science to adapt your favorite foods to your own dietary needs!
